Heart Healthy Muffin Recipe for American Heart Health Month

Since February is American Heart Month I thought I would try a new heart healthy recipe. Here is what I came up with…

I hope you will give my Heart Healthy Muffin Recipe a try, they are full of heart healthy ingredients, no added fats, and plenty of fiber.

Heart Healthy Muffins Recipe

Makes 24 muffins

Ingredients
¾ cup unbleached flour
¾ cup whole wheat pastry flour
¾ cup oat bran
¾ cup flax seed meal
1 cup brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
2 teaspoons cinnamon
1 ½ cups carrots, shredded
2 apples, peeled & shredded
½ cup raisins
1 cup walnuts, chopped (or any nut of choice)
¾ cup almond milk
2 eggs, beaten
1 teaspoon vanilla

Directions
In large bowl mix flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, and cinnamon
Stir in carrots, apples, raisins, and nuts
Combine milk, eggs, and vanilla
Pour liquid ingredients into dry ingredients
Stir just until moistened. Do not overmix
Fill muffin cups ¾ full
Bake at 350 degrees F for 15-20 minutes
