Warm Spinach Salad

Ingredients

  • 2 tablespoons vegetable oil
  • 2 tablespoons crushed garlic
  • 1/2 cup raw almonds sliced
  • 1/2 cup dried cranberries
  • 3 roman tomatoes
  • 1 cup balsamic vinaigrette
  • 1 package baby spinach
  • 1 cup goat cheese

Instructions

  • Slice tomatoes into thirds lengthwise, then crosscut into three pieces the other way, ending up with cubed pieces of tomato
    Heat vegetable oil in saute pan over medium heat
    Add garlic, heat for 30 seconds
    Add almonds and cranberries
    Saute for 1 1/2 minutes or ;until almonds are brown
    Turn off heat, add tomatoes, tossing with other ingredients
    Add vinegar and mix evenly
    Pour mixture over spinach. Top with cheese. Serve warm
