Recipes to Help Weight Loss Plateau

Lemon Chicken & String Beans

Ingredients

  • 6 tablespoons avocado oil separated
  • 2 tablespoons clarified butter
  • 2 cups fresh string beans
  • 2 1/2 cups chicken tenderloins
  • 1 teaspoon lemon zest
  • 3-4 tablespoons lemon juice
  • 1 lemon, sliced
  • 1 teaspoon minced garlic
  • salt & pepper to taste

Instructions

  • Pre-heat large skillet. Heat 2 tablespoons oil and 2 tablespoons butter.
  • Place string beans on one side of skillet. Simmer uncovered approximately 8 minutes. Season with salt and pepper.
  • Add chicken to skillet. Stir string beans and cook for another 5 minutes.
  • Cook chicken until no longer pink.
  • Stir string beans and chicken together.
  • In small bowl, mix lemon zest, lemon juice, 4 tablespoons oil, and garlic. Stir and add to skillet.
  • Add lemon slices to skillet. Simmer on low, stirring often until liquid is absorbed and chicken is completely cooked through.

No Mayo Tuna Salad with Whole Grain Crackers

Servings 2

Ingredients

  • 8 ounce-can water packed tuna
  • 1 tablespoon chopped onion
  • 1 tablespoon chopped celery
  • 1 teaspoon organic Dijon mustard
  • 1 teaspoon organic olive oil
  • fresh spinach leaves
  • 2 slices tomatoes
  • 5 whole grain crackers

Instructions

  • Finely chop tuna.
  • Add onions and celery.
  • Mix with mustard and olive oil.
  • Scoop 1/2 cup mixture on bed of spinach with tomato slices.
  • Serve with whole grain crackers.

Lettuce Wraps

Ingredients

  • 5 large romaine or bibb lettuce leaves
  • 2 tablespoons avocado
  • 3 ounces sliced chicken or turkey
  • 1 small tomato, thinly sliced
  • 1/2 small zucchini, thinly sliced
  • salt and pepper to taste

Instructions

  • Spread avocado on lettuce leaves
  • Add remaining ingredients
  • Roll each leaf
