Recipes for Sustainable Weight Loss

Spaghetti Squash

Ingredients

  • 1 spaghetti squash halved lengthwise and seeded
  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 1 clove garlic minced
  • 1 1/2 cups fresh tomatoes chopped
  • 3 tablespoons black olives sliced
  • 2 tablespoons fresh basil chopped
  • 3 tablespoons parmesan cheese

Instructions

  • Preheat oven to 350 degrees F; Lightly grease baking sheet
  • Place spaghetti squash with cut sides down on baking sheet; Bake 30 minutes
  • Remove squash from oven and set aside to cool enough to be easily handled
  • Meanwhile, heat oil in skillet over medium heat; cook and stir onion in oil until tender
  • Add garlic; cook and stir until fragrant; approximately 2-3 minutes
  • Stir in tomatoes; cook until warmed through
  • With large spoon scoop the stringy pulp from squash and place in medium bowl
  • Toss with vegetables, olives, basil and parmesan cheese

Grilled Fruit

Ingredients

  • 1 large fresh peach halved and pitted
  • 1 teaspoon coconut oil
  • 1 teaspoon cinnamon
  • 1 teaspoon unprocessed honey

Instructions

  • Brush coconut oil on peach halves
  • Sprinkle with cinnamon
  • Grill until tender
  • Drizzle with honey before serving

Notes

Other fruits that grill nicely are: pineapple, figs, and plums

Roasted Winter Vegetables

Ingredients

  • 1 pound carrots peeled
  • 1 pound parsnips peeled
  • 1 medium sweet potato peeled
  • 1 small butternut squash peeled and seeded
  • 1 teaspoon olive oil
  • salt & pepper to taste

Instructions

  • Preheat oven to 400 degrees F
  • Cut vegetables into 2-inch cubes
  • Place cut vegetables in single layer on baking sheet
  • Drizzle with olive oil, salt & pepper; Toss
  • Bake 25-30 minutes or until tender
