Recipes for Sustainable Weight Loss Challenge

Banana Ice Cream

Ingredients
1 small frozen banana
3 tablespoons milk or milk alternative
1 tablespoon chopped walnuts
Instructions
Peel and slice banana
Place banana slices and milk in blender or food processor
Blend until thick
Top with walnuts

Oven-Baked Ezekiel Sprouted Whole Grain Tortilla Chips

Ingredients

Ezekiel 4:9 Sprouted Whole Grain Tortillas

Olive Oil

Salt

Cayenne pepper (or any seasoning of choice)

Instructions

Heat oven to 375 degrees F

cut each tortilla into8 triangles

Brush with olive oil on both sides

Sprinkle with seasoning

Bake on parchment paper covered pan 7-10 minutes or until crispy

Roasted Winter Vegetables

Ingredients
1 pound carrots peeled
1 pound parsnips peeled
1 medium sweet potato peeled
1 small butternut squash peeled and seeded
1 teaspoon olive oil
salt & pepper to taste
Instructions
Preheat oven to 400 degrees F
Cut vegetables into 2-inch cubes
Place cut vegetables in single layer on baking sheet
Drizzle with olive oil, salt & pepper; Toss
Bake 25-30 minutes or until tender

No-Bake Energy Bites

Ingredients
1 cup rolled oats
1/2 cup mini dark chocolate chips organic
1/2 cup ground flax seed
1/2 cup crunchy peanut butter
1/3 cup honey organic
1 teaspoon vanilla extract
Instructions
In large bowl, combine all ingredients
Form into balls
Arrange on baking sheet and place in freezer approximately 1 hour or until set
Recipe Notes
Use any peanut butter that only contains peanuts

Roasted Winter Vegetables

Ingredients
1 pound carrots peeled
1 pound parsnips peeled
1 medium sweet potato peeled
1 small butternut squash peeled and seeded
1 teaspoon olive oil
salt & pepper to taste
Instructions
Preheat oven to 400 degrees F
Cut vegetables into 2-inch cubes
Place cut vegetables in single layer on baking sheet
Drizzle with olive oil, salt & pepper; Toss
Bake 25-30 minutes or until tender

Spaghetti Squash

Ingredients
1 spaghetti squash halved lengthwise and seeded
2 tablespoons olive oil
1 medium onion chopped
1 clove garlic minced
1 1/2 cups fresh tomatoes chopped
3 tablespoons black olives sliced
2 tablespoons fresh basil chopped
3 tablespoons parmesan cheese
Instructions
Preheat oven to 350 degrees F; Lightly grease baking sheet
Place spaghetti squash with cut sides down on baking sheet; Bake 30 minutes
Remove squash from oven and set aside to cool enough to be easily handled
Meanwhile, heat oil in skillet over medium heat; cook and stir onion in oil until tender
Add garlic; cook and stir until fragrant; approximately 2-3 minutes
Stir in tomatoes; cook until warmed through
With large spoon scoop the stringy pulp from squash and place in medium bowl
Toss with vegetables, olives, basil and parmesan cheese
