Joi French Onion Dip

Ingredients

  • 1 medium onion diced
  • 1 tablespoon olive oil extra virgin
  • 1 measure Joi sour cream recipe follows
  • 1 teaspoon worcestershire sauce
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • salt to taste

Instructions

  • Prepare Joi sour cream
  • In skillet, heat oil. Add onion, saute, stirring frequently for approximately 25 minutes or until golden and caramelized. add water intermittently if onions are drying out too quickly
  • Set aside to cool
  • In small bowl, mix sour cream, garlic powder, onion powder, and worcestershire
  • Fold in caramelized onions
  • Serve with raw veggies

Joi Sour Cream

Ingredients

  • 1/3 cup water
  • 1/2 cup Joi almond, or cashew nutbase
  • 1 tablespoon lemon juice
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon salt

Instructions

  • Place water, followed by all ingredients in blender.
  • Blend on medium high for approximately 30 seconds
  • Refrigerate to thicken and set

Notes

Can be made ahead: lasts approximately 6 days in refrigerator

Vegan Queso

Ingredients

  • 1/4 cup +2 tablespoons Joi nutbase
  • 1/4 cup filtered water
  • 1/3 cup roasted peppers drained
  • 1/4 cup nutritional yeast
  • 2 tablespoons lemon juice
  • 2 cloves garlic
  • 1 medium scallion or large slice red onion
  • 1 tablespoon olive oil extra virgin
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • 1 pinch cayenne
  • salt to taste

Instructions

  • Place water, followed by all other ingredients into blender
  • Blend on high about 30 seconds or until smooth and creamy
  • Taste and adjust seasonings and water as needed
  • Serve with tortilla chips

 

Joi Coconut Pops Recipe

Coconut Joi Pops

Ingredients

  • 16 ounces coconut water
  • 5 tablespoons Joi nutbase
  • 1 tablespoon maple syrup
  • 1/3 cup varied fruits or just one of your favorites
  • popsicle sticks
  • 2 ounce containers

Instructions

  • Blend 1/3 cup coconut water, fruits on low, separately to make purees. Look for a thick consistency and a few bits of fruit
  • Blend coconut water, Joi, and syrup
  • Layer the bottom of each container with puree
  • Fill with Joi mixture
  • Top with puree. Colors will blend in for tie die effect
  • Freeze overnight. Place popsicle sticks after 1 hour of freezing

Strawberry Milk

Ingredients

  • 1 cup strawberries
  • 2 cups Joi almond or cashew milk

Instructions

  • Cut strawberries into pieces
  • Blend strawberries and strain to remove seeds
  • Blend strawberries and nut milk. Chill
