Recipes for 7-Day Clean Eating Challenge

Day 1

Greek Salad

Ingredients

  • 1/2 head romaine lettuce chopped
  • 1/2 medium red onion thinly sliced
  • 1/2 6 oz can black olives pitted
  • 1/2 organic green bell pepper chopped
  • 1/2 organic red bell pepper chopped
  • 1 medium organic tomato chopped
  • 1/2 medium cucumber sliced
  • 1/2 cup organic feta cheese crumbled
  • 3 tbsp organic olive oil
  • 1/2 tsp fresh organic oregano
  • 1/2 medium organic lemon juiced
  • black pepper to taste

Instructions

  • In large salad bowl, combine lettuce, onion, olives, bell peppers, tomatoes, cucumber, and cheese
    Whisk together olive oil, oregano, lemon juice and black pepper
    Pour over salad and toss

Crock Pot Roast Beef

Ingredients

  • 2 cups organic beef broth or water
  • 2 tablespoons organic garlic chopped
  • salt/black pepper to taste
  • ½ - 1 teaspoon red pepper flakes optional
  • 3 organic green onions cut into 1-inch pieces
  • 3-4 lb. organic grass fed rump roast

Instructions

  • Combine broth, garlic, salt & pepper, and ¾ of the green onions in crock pot
  • Add beef
  • Cover and cook on HIGH 4 hours or LOW 8 hours
  • Remove meat from crock pot, leaving liquid in pot
  • Slice beef
  • Top sliced beef with au jus and green onion pieces

Microwaveable Quinoa Cereal

Servings 2 bowls

Ingredients

  • 1/2 cup organic quinoa
  • 1 cup filtered cold water
  • 1/2 tsp organic cinnamon
  • 1 tsp organic butter optional
  • 1/2 banana
  • 1 oz raw almonds or walnuts chopped
  • 1 oz 100% maple syrup optional
  • 1/2 cup homemade almond milk

Instructions

  • Rinse quinoa
    Combine quinoa, water, cinnamon, and 1/2 tsp butter
    Microwave on high 4 minutes; stir; microwave additional 3 minutes
    Remove from microwave, cover with foil
    Let sit 2 minutes
    Fluff quinoa; stir in remaining butter
    Divide between 2 bowls
    Top with banana, nuts, maple syrup, and milk

Day 2

Avocado Egg

Ingredients

  • 1 avocado pitted and cut in half lengthwise
  • 2 eggs
  • salt & pepper to taste

Instructions

  • Preheat oven to 425 degrees F
  • Cut small piece from bottom of avocado so it sits upright; place halves in baking dish
  • Crack one egg into each half avocado hole; sprinkle with salt & pepper
  • Bake for 15-20 minutes

Salad w/Tuna

Ingredients

  • 1-2 cups greek salad leftover
  • 3-4 oz canned tuna packed in water

Instructions

  • Mix tuna with salad

One Pot Meal

Ingredients

  • 2-3 tablespoons avocado oil
  • 1-2 pounds meat poultry of choice
  • 4-6 cups fresh organic vegetables of choice
  • salt/pepper to taste

Instructions

  • In large skillet heat 2-3 tablespoons oil on medium heat
  • Brown meat/poultry
  • While meat is browning chop vegetables
  • Remove browned meat to platter; add vegetables to skillet
  • Cook until partially cooked; add back browned meat
  • Season to taste

Homemade Fruit & Nut Mix

Ingredients

  • ¼ cup organic raisins
  • ¼ cup homemade dried cranberries see recipe below
  • 1 oz raw almonds
  • 1 oz raw walnuts
  • ¼ cup shredded unsweetened coconut

Instructions

  • Mix all ingredients; Portion into containers for grab and go

Dried Cranberries

Ingredients

  • 12 oz bag fresh cranberries
  • 2 quarts boiling water

Instructions

  • In bowl, pour boiling water over cranberries
  • Let sit in water until skin pops
  • Drain
  • Preheat oven to 350 degrees F for 10 minutes
  • Place cranberries on cookie sheet in oven, turn off oven
  • Let sit overnight
  • Store in freezer

 Day 3

Buckwheat Pancakes

Ingredients

  • 2 cups buckwheat flour
  • 2 tsp salt
  • 3 1/3 cups water
  • 1 organic egg

Instructions

  • Mix flour and salt in large bowl
  • Add water gradually, stir well after each addition
  • Add egg, stir
  • Cook pancakes on skillet
  • Serve with maple syrup and fruit of choice

Notes

This should make enough for 2 meals. Save the extra for Day 6

Spicy Beef Salad

Ingredients

  • 2 oz leftover beef diced
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon organic extra virgin olive oil
  • cayenne pepper to taste
  • 1 teaspoon fresh cilantro chopped
  • ½ cup cooked quinoa
  • salt to taste
  • 2 cups organic spring mix

Instructions

  • Toss first 7 ingredients together
  • Serve on greens

Red Lentil Stew

Ingredients

  • 2 tablespoons organic olive oil extra virgin
  • ½ onion diced
  • 2 tablespoons garlic minced
  • 2 teaspoons black mustard seeds optional
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • ½ teaspoon coriander seed
  • 1 small organic carrot diced
  • 2 cups cauliflower small florets
  • 1 ¼ cups red lentils rinsed
  • 6 cups water
  • 1 cup fresh organic tomato diced
  • 2 cups broccoli small florets
  • ½ teaspoon salt
  • 1 tablespoon fresh organic lemon juice
  • fresh parsley chopped

Instructions

  • In large pan heat oil on medium heat
  • Sauté onion, garlic until tender
  • Add mustard seeds and stir until they begin to pop
  • Add other spices and sauté 1 minute
  • Add carrot and cauliflower; stir to coat
  • Add lentils and water; bring to boil
  • Reduce to low heat; simmer about 25 minutes or until lentils are soft
  • Add tomatoes, broccoli and salt
  • Continue to simmer 5 minutes
  • Just before serving stir in lemon juice and sprinkle with parsley

Day 4

Spinach Egg Scramble

Ingredients

  • 4 organic egg whites
  • 1 cup fresh organic baby spinach
  • 1 small organic tomato diced (optional)
  • 1 tablespoon fresh basil
  • salt & pepper to taste

Instructions

  • Mix all ingredients in bowl
  • Spray pan with olive oil cooking spray; heat
  • Pour mixture into pan, scramble

Fruity Chicken Salad

Ingredients

  • 2-3 oz leftover chicken
  • ¼ cup organic blueberries
  • ¼ cup pineapple chopped
  • 1 oz raw walnuts
  • 2 cups mixed organic greens
  • 1 oz strawberry balsamic dressing see recipe below

Instructions

  • Mix turkey, fruit, nuts together
  • Place on greens; top with dressing

Notes

Strawberry Balsamic Dressing
Ingredients: 
4 large organic strawberries
½ cup balsamic vinegar
1 tablespoon minced garlic
Dash salt (optional)
Instructions: 
Place all ingredients in blender Puree

Lemon Pepper Salmon w/Cauliflower Rice

Ingredients

  • 2 4 oz filets wild salmon
  • 1 small organic lemon
  • salt/pepper to taste
  • For cauliflower:
  • 1 small head cauliflower chopped into ½ -inch pieces
  • 1-2 teaspoons organic olive oil
  • 1-2 cloves garlic minced
  • salt/pepper to taste
  • 2 tablespoons water

Instructions

  • Preheat oven to 400 degrees F
  • Place salmon skin side down on baking sheet.
  • Squeeze 1-2 quarters lemon juice over salmon
  • Season with salt, pepper and ¾ lemon zest
  • Bake salmon 12=15 minutes or until desired doneness
  • Meanwhile, place chopped cauliflower in blender or food processor
  • Pulse on low until ground into rice-like consistency
  • Heat oil in large skillet over medium heat; add garlic
  • Saute for 30-60 seconds, until fragrant
  • Add cauliflower rice; season with salt and pepper
  • Stir in water; mix well; cook approximately 7 minutes until soft
  • Spoon portion of cauliflower rice on plate
  • Top with rest of lemon zest; place salmon filet on top

Extra Easy Hummus

Ingredients

  • 1 15 oz can organic garbanzo beans drained, reserve liquid
  • 2 tsp ground cumin
  • salt and pepper to taste
  • 1 tbsp organic olive oil

Instructions

  • In blender or food processor combine all ingredients.
  • Blend on low speed gradually adding reserved bean liquid until desired consistency is achieved.

Notes

Serve with fresh organic vegetables of choice

Day 5

Crock Pot Turkey Breast

Ingredients

  • 10 pound organic, free range turkey breast
  • 1 tablespoon onion powder
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped organic fresh basil
  • 1 tablespoon chopped organic fresh oregano
  • salt & pepper to taste

Instructions

  • Place turkey in crock pot
  • Stir onion powder, parsley, basil, oregano, salt & pepper in bowl until thoroughly combined; sprinkle over turkey breast
  • Cook on LOW 8-9 hours or until turkey is very tender

Notes

Serve with…Options: ½ cup quinoa or 1/2 cup brown rice or 1/2 cup corn and any non-starchy vegetable of choice

Kale Chips

Ingredients

  • ½ bunch organic kale leaves
  • 2 tablespoon organic apple cider vinegar
  • ½ teaspoon sea salt
  • ½ teaspoon paprika
  • ¼ teaspoon freshly ground black pepper

Instructions

  • Remove kale leaves from the stem and cut into bite size pieces
  • Whisk together apple cider vinegar, salt, paprika and pepper; massage the mixture into kale leaves.
  • Place kale on a parchment lined baking sheet and bake for approximately 15-20 minutes at 350 °F.

Day 6

Tangy & Tart Salmon Salad

Ingredients

  • 4 oz leftover salmon
  • 1/2 cup celery diced
  • 1/4 cup cucumber diced
  • 1/2 cup green apple diced
  • juice of ½ lemon
  • 1 teaspoon organic olive oil
  • salt & pepper to taste
  • organic lettuce or other greens

Instructions

  • Mix first 7 ingredients together
  • Serve on bed of greens

Black Bean Soup

Ingredients

  • 2 teaspoons organic olive oil
  • 1 medium onion chopped
  • 2 garlic cloves minced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 2 15 oz cans organic black beans rinsed & drained
  • 1 can organic vegetable broth
  • 1 cup water

Instructions

  • In 3 quart pot, heat olive oil over medium heat
  • Add onion and garlic; cook until tender
  • Stir in remaining ingredients and bring to boil
  • Reduce heat to low and simmer for 15-30 minutes
  • Using a handheld mixer, blend the soup together to a creamy consistency

 Day 7

Banana Berry Green Smoothie

Ingredients

  • ½ banana
  • ½ cup organic blueberries
  • ½ cup organic strawberries
  • 1-2 cups fresh organic baby spinach 1scoop 1 scoop protein powder
  • 1 scoop pea protein powder
  • 1 cup filtered water or homemade nut milk see recipe below

Instructions

  • Place all ingredients into blender
    Blend to desired consistency

Notes

Almond/Cashew Milk
Ingredients:
1 cup raw almonds or cashews, soaked
3 cups water, plus some for soaking nuts
½ teaspoon vanilla (optional)
Cheesecloth
Directions:
Place raw nuts in bowel; cover with cold water
Allow to soak at least 6 hours – overnight is best
Drain; Rinse
Combine soaked nuts and water in heavy duty blender
Blend on low then raise to high for 1-2 minutes or until milk is completely smooth
Add vanilla
Blend to combine
Strain milk through cheesecloth into storage container (a quart size mason jar works nicely)
Milk will store in refrigerator for 3-4 days

Lettuce Wraps

Ingredients

  • 2 tablespoons avocado
  • salt & pepper to taste
  • 5 large organic romaine lettuce leaves
  • 3-4 oz leftover chicken
  • ½ cup organic tomato sliced
  • ½ medium zucchini sliced

Instructions

  • Spread avocado on lettuce leaves
  • Add the remaining ingredients
  • Roll each leaf

Spaghetti Squash Medley

Ingredients

  • 1 medium spaghetti squash
  • 2 cups chopped, seeded organic tomatoes
  • 1 tablespoon olive oil
  • 1 garlic clove minced
  • 2 tablespoons minced fresh basil
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 ½ cups fresh organic broccoli florets
  • 1 organic carrot thinly sliced
  • 2 tablespoons water
  • 2 tablespoons grated parmesan cheese

Instructions

  • Pierce squash 6 times with sharp knife; place on microwave-safe plate Microwave on high 7 minutes; turn squash; cook 7 minutes longer Cover with inverted bowl; let stand for 10 minutes Meanwhile, combine tomatoes, oil and garlic in microwave-safe bowl; heat, uncovered on high for 2-3 minutes or until tomatoes are softened, stirring once Stir in basil, salt and pepper Place broccoli, carrot and water in another microwave-safe bowl Cover and microwave on high for 2 minutes or until tender; let stand 5 minutes; add to tomato mixture Halve squash lengthwise; remove seeds. With a fork, separate squash into strands; toss with tomato mixture Serve with parmesan cheese
