Pear Cranberry Crumble

Ingredients

  • 4 large Bartlett pears, peeled, cored, sliced into small bite-sized pieces
  • 1 cup fresh or frozen cranberries
  • 1/2 cup honey
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon cinnamon
  • 1 cup old fashioned oats
  • 1/2 cup packed almond meal or almond flour
  • 1/2 cup chopped walnuts
  • 1/2 cup lightly packed brown sugar
  • 1/4 teaspoon salt
  • 4 tablespoons butter, melted
  • 3 tablespoons Greek yogurt

Instructions

  • Preheat oven to 350 degrees F
  • In 9 x 9- inch baking dish, mix together pears, cranberries, honey, cornstarch, lemon juice, ginger and cinnamon. Set aside.
  • In medium mixing bowl, stir together oats, almond meal or flour, walnuts, brown sugar, and salt. Mix in yogurt and melted butter.
  • Stir until well mixed
  • Dollop spoonfuls over the pear/cranberry mixture. Use fingers to break up oat mixture and evenly distribute.
  • Bake 40-55 minutes or until filling is bubbling and top is lightly golden.

Notes

Can be served with a scoop of vanilla ice cream!
