Pear Cranberry Crumble
Ingredients
- 4 large Bartlett pears, peeled, cored, sliced into small bite-sized pieces
- 1 cup fresh or frozen cranberries
- 1/2 cup honey
- 3 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1/2 teaspoon ground ginger
- 1/4 teaspoon cinnamon
- 1 cup old fashioned oats
- 1/2 cup packed almond meal or almond flour
- 1/2 cup chopped walnuts
- 1/2 cup lightly packed brown sugar
- 1/4 teaspoon salt
- 4 tablespoons butter, melted
- 3 tablespoons Greek yogurt
Instructions
- Preheat oven to 350 degrees F
- In 9 x 9- inch baking dish, mix together pears, cranberries, honey, cornstarch, lemon juice, ginger and cinnamon. Set aside.
- In medium mixing bowl, stir together oats, almond meal or flour, walnuts, brown sugar, and salt. Mix in yogurt and melted butter.
- Stir until well mixed
- Dollop spoonfuls over the pear/cranberry mixture. Use fingers to break up oat mixture and evenly distribute.
- Bake 40-55 minutes or until filling is bubbling and top is lightly golden.
Notes
Can be served with a scoop of vanilla ice cream!
