Spinach Egg Scramble

Ingredients

  • 4 egg whites
  • 1 cup fresh baby spinach
  • 1 small tomato, diced optional
  • 1 tablespoon fresh basil, chopped
  • salt & pepper to taste

Instructions

  • In small bowl, mix all ingredients
  • Spray pan with cooking spray; heat
  • Pour mixture into pan; scramble

Easy Healthy Smoothie

Ingredients

  • 1/2 cup orange juice
  • 1/2 cup filtered water
  • 1 cup sliced strawberries
  • 1 banana
  • 1 cup fresh baby spinach
  • 1 scoop organic, plain protein powder

Instructions

  • Add all ingredients to blender
  • Blend to desired consistency

Notes

  • you can substitute almond milk for water
  • wash all produce
  • you can freeze leftover fruits for next smoothie
  • you can use spinach or kale
  • you can experiment with ingredients in smoothies - different fruits, plain yogurt, nut butter, etc.

Breakfast Quinoa with Fruit & Nuts

Servings 2

Ingredients

  • 1/2 cup quinoa
  • 1 cup cold water
  • 1/2 teaspoon cinnamon
  • 1/2 cup fruit of choice
  • 1/4 cup nuts of choice

Instructions

  • Rinse quinoa
  • Combine quinoa, water, cinnamon
  • Microwave on high 4 minutes
  • Stir; microwave 3 more minutes
  • Remove from microwave, cover with foil, let sit 2 minutes
  • Fluff quinoa
  • Top with fruit and nuts
