Ginger Chicken Stir Fry

Ginger Chicken Stir Fry

Ingredients

  • 1/3 cup tamari
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, peeled and grated
  • 1 tablespoon coconut oil
  • 1 1/4 pounds chicken breast, cubed
  • 1/2 medium onion, sliced
  • 3 stalks celery, sliced
  • 1 red bell pepper, sliced
  • 2 cups broccoli florets
  • 4 cups kale leaves, chopped

Instructions

  • Mix tamari, garlic, and ginger in jar. Shake well. Set aside.
  • Saute chicken and onion in coconut oil over medium heat, 8-10 minutes or until chicken is mostly cooked through.
  • Add celery, red pepper, and broccoli. Saute for additional 5 minutes.
  • Pour in sauce from jar. Stir well to mix. Once everything is combined, turn off heat and stir in kale. Continue to stir until kale is wilted.

Notes

Leftovers: Keeps well in fridge up to 3 days
Vegan or Vegetarian: Use chickpeas or tofu instead of chicken
